Sweet Potato Fries
My daughter loves these, and this recipe is low fat. Two servings is less than 200 calories, so you could have a lot without sacrificing much.
1 tsp cinnamon (optional)
1/4 tsp salt
1 tbsp olive oil
2 5" long sweet potatoes
How To:
1.Peel sweet potatoes and cut in half crosswise.
2.Cut in half lengthwise and then cut each piece into 4 wedges.
3.Place in 9x13" pan and brush lightly with olive oil.
4.Toss to coat evenly.
5.Sprinkle with salt and cinnamon (or any combination of cinnamon, nutmeg, allspice, etc.)
6.Bake 35 minutes at 400 °F (200 °C) turning once.
Yields four servings. 87 calories each!

Jake's Salad
My husband LOVES dried cranberries, so I created a recipe which showcases them. Enjoy!
5 Leaves of butter lettuce (5 cal)
4 oz of turkey breast (deli style) (100 cal)
1/8 cup of dried cranberries (50 cal)
2 tbsp of fat free balsamic vinaigrette (25 cal)
1/2 cup of cucumber (10 cal)
Total: 195 cal
With a slice of sourdough toast with 1 tsp of butter: 300 cal
1. wash and dry lettuce
2. roughly chop turkey
3. slice cumber
4. put turkey, cranberries, and cucumber on the lettuce and dress with the dressing
(5. lettuce wrap option: mix follow all steps above--(but chop instead of slice the cucumber), but then mix all the ingredients except the lettuce in a bowl, then spoon even parts of the mixture into each lettuce leaf--yields 5 lettuce wraps)
